Run by chef François Bassas and Marie, who manages the front of house, the restaurant offers a modern vision of cooking: dishes prepared fresh, using local produce and respecting the land.

      The journey of a passionate individual, from Paris to Ariège

      Before settling permanently in the Pyrenees, François Bassas honed his skills in renowned kitchens such as the Ritz and Matignon in Paris, and later in prestigious restaurants in Toulouse. From these experiences, he acquired a solid technique which he now adapts to local flavors. This creative work was recognized with a Georgette d'Or award in the inventive gastronomy category.

      Organic and seasonal cuisine

      Here, the raw ingredient reigns supreme. The restaurant prioritizes an organic and sustainable approach, working closely with local market gardeners and producers. The menu is intentionally short to reflect the rhythm of the seasons.

    We had wanted to have lunch there for a very long time, but my husband was worried about ending up eating something he didn't like. All I had to do was mention his preferences in the reservation email. The dishes were as beautiful as they were delicious, a true delight for the taste buds, from the appetizer to the dessert! The service was very pleasant, the interior decor lovely, and the seats comfortable (and yes, that's important too!). A big thank you to the chef for the special attention, as I had mentioned it was a birthday. The wine was also wonderful (Pacherenc du Vic-Bilh). You will have the pleasure of seeing us again, or rather, we will have the pleasure of returning. Thank you.
