The ancient vaulted ceilings, bathed in soft light, and the terrace overlooking the valley offer breathtaking panoramic views of the Pyrenees. Halfway between Toulouse and Spain, in the heart of the Ariège Pyrenees Natural Park, this gastronomic restaurant is a place where one can take the time to savor the moment and be carried away by the poetry of the surroundings.


      Pamela's cooking and Gianni's art of entertaining

      In the kitchen, Pamela Simoes transforms local produce into delicate and surprising dishes. A pastry chef by training, originally from Brazil, and with experience in prestigious Michelin-starred restaurants in France, she combines technique, creativity, and sensitivity to offer refined yet generous gastronomic cuisine. Alongside her, Gianni, her husband and partner, brings his experience in Michelin-starred service to the table, guiding each visit with warmth and precision. Together, they create a perfect balance between the food and the welcome, transforming every meal into a true culinary experience. Awarded the Bib Gourmand by the Michelin Guide and the Gault & Millau guide, they elegantly combine exacting standards and passion.

    An exceptional experience at Carré de l’Ange! We discovered this restaurant to celebrate our 25th anniversary, and it was a truly enchanting experience. Parking was very easy right nearby, and we arrived in a magnificent setting with a breathtaking view. This family-run restaurant is owned by a Brazilian chef and her husband, who manages the front of house: a passionate duo whose enthusiasm shines through in both the warm welcome and the delicious food. We had lunch on the terrace, all to ourselves, on a Tuesday afternoon, with splendid weather, which made the moment even more magical. The service was impeccable: the owner took the time to explain each dish with great kindness. We opted for the Cardinal menu at €59, accompanied by drinks (pear cider as an aperitif, sparkling water, white and red wines, and coffees) for a total of €191.50 for two people. The dishes are true works of art: magnificent presentation, original flavor combinations, each bite a delight for the taste buds. A thoughtful touch particularly touched me: the option to choose the apple dessert from the lower menu, as I'm not a big chocolate fan. In short: a superb discovery, a wonderful experience, and a restaurant we wholeheartedly recommend. Thank you to Le Carré de l’Ange for this unforgettable gastronomic interlude!
