Nestled at the foot of the Ariège Pyrenees, Saint-Girons is renowned for its warm welcome. Bisected by two mountain streams, the Salat and the Lez, this charming town has everything to please. Its picturesque streets are surrounded by a lovely, rolling, verdant landscape, but what draws the crowds to the gastronomic capital of the Couserans region is the Saturday morning market. A vibrant gathering of artisans who come down from the mountains to sell the finest regional products, this market is eagerly anticipated by many for its convivial atmosphere!

The Saint-Girons market, the most beautiful in the region!

Every Saturday morning, the same ritual unfolds in Saint-Girons. The town, which usually has "only" 6,500 inhabitants, transforms into a giant, joyful, and colorful crowd. Here, you hear every language spoken, in a very laid-back, bohemian atmosphere. The 120 or so passionate exhibitors mostly offer organic, local, and natural products, free of pesticides and GMOs, such as Bethmale cheese, or regional crafts like wool. Our favorite stand is undoubtedly that of Guillaume from Jardins d'Illas, offering a range of heirloom vegetable varieties, guaranteed non-hybrid, and cultivated using animal traction.

After the market, be sure to follow the tradition of having a coffee on the terrace of Le Bouchon, the small bar on the square, listening to the musicians who create a lively atmosphere. And to finish off your day, take a stroll through La Bouquinerie des Arcades. Located opposite Le Bouchon, the shelves of this charming, old-fashioned shop are piled high with secondhand books.

Fancy a cold beer at the La Brouche craft brewery?

In Ariège, microbreweries are springing up like mushrooms, much to the delight of our taste buds. And Saint-Girons is no exception! Since 2005, Pierre-Jean, Eric, Bastien, Marie-Hélène, and Maxime have been brewing 1,000 hectoliters of beer a year in their downtown brewery. Their star? La Brouche, a light blonde ale made with spring water and organic malt that has made them famous in the region. Since then, the range has expanded, and Pierre-Jean's son has even created a line of artisanal lemonades that perfectly complements it.

You'll learn everything about brewing!

The brewery can be visited free of charge from Wednesday to Friday, from 3pm to 7pm, and on Saturday, from 10:30am to 12:30pm, and from 3pm to 7pm. On site, you can admire the gigantic copper vats containing the precious elixir, understand the production process, taste it, and even leave with a few bottles to brighten up your evenings.

Delight and tradition at the Croustades Shop in Saint-Girons

Whether filled with plums, apples, or pears, the croustade has been a part of the Couserans heritage for over four centuries. Flour, melted butter, egg yolks, sugar, and a touch of rum —that's the secret to this enhanced puff pastry that crackles in your mouth and encases a precious, melt-in-your-mouth fruit compote. A true flavor explosion!

This delicious dessert is even the subject of a minor regional rivalry over who can make the best croustade. One thing is certain: you'll find the best croustade in Saint-Girons at La Boutique à Croustades, where, since 1983, Martine Crespo has been operating according to tradition, using quality local products.
