A professional for over 20 years, he's now embarking on a gourmet adventure where fruits, vegetables, and plant-based proteins take center stage, much to the delight of vegetarians. Made with fresh, seasonal produce, the recipes are original, designed to surprise palates with new flavors, such as breaded rolls of feta, spinach, mozzarella, and mushroom sauce; sweet potato cakes roasted with rosemary; gochujang cauliflower with sesame-crusted leaves; or onion bhajis with mint, lemon, and white bean sauce.
