Based in Beaucens , 40 minutes south of Tarbes in the Pyrenees National Park, Pierre works with passion for regional products. In love with his terroir and in search of quality, he makes it a point of honor to select only local ingredients such as Porc Noir de Bigorre AOP, Tarbais beans or duck from the southwest.

An experienced butcher and passionate charcutier, he perfectly masters the art of salting and venison. Each slice awakens the taste buds with its fragrant taste and its sweetness, while the cooked dishes are shared for a good moment of conviviality.

The recipes are all homemade by Pierre and his team, who sublimate the meat and work with noble materials with the greatest respect with a know-how that is passed down from generation to generation. L'Atelier Pierre Sajous is a nugget of indulgence that quickly becomes addictive, also to be found in their second shop in Lourdes, la Maison du Jambon.
