At La Cave d'Occitanie, craft beers, natural wines and exceptional spirits are making eyes at every palate

Fifteen years ago, we set down our first bottles in Pechbonnieu. Since then, nothing on the shelves of La Cave d'Occitanie has been left to chance. Every bottle has been tasted, discussed and compared before earning its place. The selection has been built with the same rigor that goes into a good blend: demand, patience, and a genuine curiosity for anything out of the ordinary. Cellar by day, bar by night — here, discovering and sharing go hand in hand!

From hops to grapes: a taste for discovery

The craft beer selection is the DNA of the house! Among the many references on offer, La Cave d'Occitanie showcases local breweries such as Le Gué des Moines, Ratz and Aviateur — beers brewed just a few kilometers from us, offering a glimpse of the richness of local know-how.

The selection then widens to a national scale, with breweries such as Hoppy Road, La Superbe, Fauve Craft Bière, Piggy Brewing Company and La Débauche, each embodying in its own way the creative energy of the booming French craft scene.

But the team's curiosity knows no borders. Belgium also holds a prime spot in the selection, notably with essential names such as Cantillon, De Ranke, Lupulus, Dupont and Boernef, which carry on a brewing heritage shaped over generations, where traditional methods and historic know-how continue to build the reputation of Belgian beer.

Germany makes its mark too, through its great classics: Pils, Helles, Weissbier and Dunkel. These are all emblematic styles of a brewing culture rooted in particularly demanding traditions, where every recipe follows a strict set of rules, guaranteeing consistent quality for centuries.

Garage Beer, Basqueland and DosKiwis, based in Spain, alongside Stigbergets in Sweden, represent part of a new generation of European breweries having fun shaking up the rules.

La Cave d'Occitanie also offers a wide range of expressions from French vineyards. The Southwest is well represented, led by estates such as Plaisance Penavayre in Fronton, Laballe in Gascony and Cazottes in Gaillac. Fronton's Négrette grape brings notes of violet and liquorice. In the Landes, Laballe grows saline wines on the sands of the Bas-Armagnac. In Gaillac, Cazottes showcases rare, native grape varieties. The Languedoc offers a more Mediterranean expression, found notably at Clos du Gravillas and Jean-Baptiste Sénat. In the Rhône Valley, Domaine Gramenon favors generous reds centered on fruit and balance. Further north, Domaine de l'Écu, in the Loire, works with Chenin and Melon de Bourgogne for wines that gain in tension, freshness and minerality. The Beaujolais, represented by Marcel Lapierre, stands out with fruity, easy-drinking reds, emblematic of Gamay and natural winemaking. Finally, Les Foulards Rouges illustrate a freer approach to the Roussillon, with natural wines that strive to keep their freshness and drinkability despite the region's sun-soaked character.

Something to nibble, something to feast on, and a sweet finish

For a light bite, there are plenty of treats to nibble on! From olive oil popcorn to artisanal chips, not forgetting nachos to dip in melted cheddar, guacamole or salsa, there's something for every craving. When hunger strikes harder, you're spoilt for choice: generous charcuterie and cheese boards, a sweet-and-savory touch with chorizo sautéed in honey and garlic, or the classic croque-monsieur on country bread. You can also go for a mini cheese pizza, not to mention our brioche-bun hot dog topped with a pure beef sausage and fried onions, customizable with a choice of sauces. To finish things off on a sweet note, two must-haves round out the menu: the triple chocolate muffin and the chocolate-hazelnut cookie.

La Cave d'Occitanie is about far more than what's in the glass or on the plate: above all, it's a place that comes alive, designed for getting together, chatting, and enjoying a warm, festive atmosphere. All year long, the bar sets the pace of its evenings with a concert lineup. From the first warm days through to autumn, Friday nights become musical rendez-vous, bringing the bar to life to the sound of artists from a wide range of musical worlds.
