The Toulouse violet, in all its forms

In Toulouse and Haute-Garonne, you will often come across products made from violets, but why? It's a romantic story... It is said that a violet flower arrived in Toulouse thanks to a soldier who gave it to his beloved, returning from a mission in Parma... Since then, the violet has been one of the symbols of the pink city.

Today, it is a product used in cooking, from large restaurants to small tea rooms. It is a flower that was very fashionable in perfumery, confectionery (coated with crystallized sugar), decoration, to make liqueur, jelly... And also, simply for its color. Pastel blue, from Toulouse

Pastel blue (which has nothing to do with crayons) is the dyer's pastel, coming from a plant (curiously yellow) Isatis tinctoria. It is a perennial known since Antiquity, which has medicinal virtues and was used as a dye. It takes 2 years to make the pigments for pastel blue. It all starts with the leaves which are harvested, crushed, then the resulting paste is dried into a ball. It is powdered and cooked to start the oxidation process which produces this characteristic indigo blue color. After other handling, this pigment can be used to dye clothes, objects, for the manufacture of decorative elements and artistic supplies. In Lauragais, that is to say between Toulouse, Albi and Carcassonne, pastel traders made their fortune and it is this commercial activity which is the basis of the prosperity of the region!
