      Among our specialties, discover the famous Violettine, a delicate flower-shaped pastry with a melting violet jelly center. This unique creation earned us second place for the Midi-Pyrénées Sud region during the show La Meilleure Boulangerie de France 2024! The Violettine, both crunchy and melting, is an ode to the culinary heritage of Toulouse, with its floral and refined flavor that leaves no one indifferent.

      But Violettine is just the beginning of this taste adventure. Let yourself be tempted by our almond tiles, light and crispy, ideal for a sweet break, or by our signature product: violet meringues, enhanced with delicate cocoa bean nibs. This subtle combination of the crunchiness of the meringue, the sweetness of the violet and the character of the cocoa makes each bite a unique sensory experience.


      Chocolate lovers will be delighted! Our artisan chocolatiers create fine pralines, flavored ganaches and other delicacies, perfect for a chocolate break or as a gift. Each bite is made with carefully selected ingredients to guarantee incomparable quality and taste.

    I'm adding another star to my review, which I posted a year ago. Maison Gelis is a place where my daughter and I love to come for a snack. It's a little treat for us from time to time, a moment for us where we're sure to enjoy ourselves (often on the premises). Once, we had a snack at McDonald's ^^ (ouhhh, that's a sin) not good at all and not cheap, and we realized that for the same price we could have a snack at Maison Gelis, yes. Also, you'd have to be stupid not to choose the quality and the lovely setting of the tea room. We have our favorite products: the famous Violetine, a favorite (hoping it lasts so we can enjoy it for a long time), and the Lemon Delight, which is there every time we visit. A slight disappointment (but I was told it would come back) was a red fruit dessert (I forgot the name) that I really liked and unfortunately haven't been able to find for a while. A huge thank you to the person who offered us kombucha as a drink to accompany our snack (on site). We hadn't heard of it at all, but now we drink it (even at home). Thank you for introducing us to it. It's a local product, too, and we love it. We also really like the breads (the pavé de farinel, the rye pie, excellent, our favorites). It's the bakery furthest from my home, it's not always easy to go there systematically, but it's our favorite for its undeniable +++ quality. ---------------------------------------------------------------------- Older, a year ago: We tasted the famous Viennese pastry today (yes, it was time to form an opinion): La Violettine, which revealed to me that I was chauvinistic (I didn't know... come on Carbonne), a very, very nice surprise, not too sweet, original, and very cute. We hope it will remain available for a long time. The sourdough bread here, a "loaf of flour"? I forget the name, very good, the bread is sourdough, impeccable in every way, and really no more expensive than at the supermarket or other industrial chains, with the added bonus of quality and craftsmanship. When it comes to pastries, we're quite conflicted in our family, hence the missing star. Visually, it's always at the top of its game, with impeccable perfection and finesse. However, we don't always agree on the taste. Quite often, the taste doesn't live up to the visual (it must be said that visually, it's so high-level)! These are purely personal tastes and subjective opinions (tastes and colors), but often there's still something to be said (family, guests). For example, for the lemon delight (pictured), which has a lemony flavor and a purely exquisite texture (meringue), not to mention the impeccable visual appeal, several of us found it unbalanced; everyone found it really too sweet (and we love sugar more than we should), which probably won't stop me from eating it again. What everyone agrees on is that it's a high-quality bakery and pastry shop (tea room - that's great) where everything is made with extreme care, attention to detail, and presentation! What we might call a love of a job (very) well done. The owners are extremely kind and humble.
