Thomas Piquemal invites you to discover his great red wines produced at the Domaine d'Engraviès in Vira , not far from Mirepoix. Independent winemaker, Thomas takes care of the entire process of creating his wines, from the seed to the sale of the bottles! Planting, maintenance of the vines, harvesting, vinification, aging, bottling and sale, there is no shorter path between the vine and its wine.

It was in 2011, after his studies and 6 years spent in Burgundy learning his trade, that he joined the Domaine d'Engraviès. He acquired it in 2014 and since then has been developing great Ariège wines, following the IGP. 8 hectares of vines are cultivated, out of the 75ha that make up the appellation.

The wines of Domaine d'Engraviès are 100% organic and certified . Since the creation of the plot in 1998, they have been aged this way. Thomas is a winemaker who takes great care of his vines, this is how good wine is made! He makes plot selection, to get the best out of the 3 grape varieties he works on the estate: Syrah, Merlot and Cabernet Sauvignon. He makes his own blends to offer lovers of good wines 5 to 6 vintages, all different but with the same quality requirements. The maintenance of the plots is done with care, because in organic farming, it is easier to prevent than to cure. Pruning is reasoned and ploughing in difficult plots is done by horse. The harvest is entirely done by hand and to encourage the intense expression of this generous terroir, he proceeds to vatting by gravity. He wants to transform the grapes into wine as naturally as possible and for this, he works with indigenous yeasts, under temperature control. For aging , he favors old barrels to avoid flavoring the wine with tannins from new wood. Bottling is done on site, approximately 2 years after aging.

Les Coteaux d'Engraviès is 5 regular red vintages and 1 rosé, which you can buy directly from the producer by coming for a visit and tasting at the estate:

Fleur de Cailloux (a spicy wine, perfect with meat), Orchidée (a more floral wine but still with spicy notes), Roc des Maillols (a blend of 3 grape varieties, complex and powerful), Fount Cassat (perfect with red meats, a wine with character), Esprit des Cimes (a gem! A wine with concentrated aromas, with a nice length, perfect for noble meats such as duck breast, lamb, etc.).
